Creamy Blueberry Coconut Smoothie

I love a nutritiously dense Smoothie. A Smoothie can be a perfect drink to start your day or great booster for when you hit that mid afternoon slump.This is a healthy, great tasting smoothie that the whole family can enjoy.
I wash and freeze my own organic blueberries for this recipe. These add a refreshing summer twist to the smoothie while freezing them helps retain their nutrients and keeps them fresh and to hand. I prefer to use organic fruit and vegetables where possible. Blueberries are of course a summer fruit and so this smoothie is a great way to incorporate local seasonal fruit to your diet.
The avocado lends a creamy texture to the smoothie while the date gives it a delicious toffee like flavour and acts as a natural sweetener . Avocados are full of good fats which help baby’s brain development and also a good source of fibre, folate and Vitamins. Avocado can also help reduce morning sickness.

Serves 1
1 cup coconut milk (or whatever milk you prefer )

1/4 ripe avocado

1/2 cup frozen organic blueberries

1 date, pitted

3 ice cubes

pinch of sea salt
Add all the ingredients to blender, blend for 1 minute and drink immediately
