The Ultimate Summer Superfood Salad



I always try to eat as healthy a diet as I can but I was especially focussed on doing so during my pregnancies as of course I wanted only the best nutrition for both babies and me. One of my favourite things to eat during the summer is a delicious superfood Salad that goes great with some grilled fish or any other light protein source.

I usually start with spinach which is famously packed full of folic acid – very important for the development of a healthy foetus, while broccoli is a great source of Vitamin A and iron – also fundamental for a healthy pregnancy. Avocado is great source of fantastic fatty acids as well as vitamin B6. I eat in season whenever possible so asparagus is another star of the summer salad being in season in the UK from April – July and British asparagus is truly the best.

Do be sure to wash vegetables and salad properly before cooking or eating

Serves 4

For The Salad

200g British asparagus, woody ends removed

200g purple sprouting broccoli or tenderstem normal broccoli

1 tbsp coconut oil

2 large handful of spinach

250g cherry tomatoes halved

1 large ripe avocado sliced

a pinch of sea salt to taste

For the Dressing

2 tbsp extra virgin olive oil
1 tbsp runny honey
2 tbsp lemon juice
1/2 tsp sea salt
Heat the coconut oil in a pan over medium heat, add the asparagus, broccoli 3 tablespoons of water and a pinch of salt. Cover and steam for 2 to 3 minutes. Then rinse with cold water drain and leave to cool.
Place the spinach in your serving dish
Lay the asparagus and broccoli across the spinach
Add the tomatoes and avocado over the salad
To make the dressing mix all the ingredients together
Drizzle with the dressing and serve
