Mother of 1 Dunja shares her favourite recipe, we have made it more yummy mummy friendly.

Dunja – This recipe for Banana Loaf is probably my favourite recipe of all time. It was invented by a friend of mine and I am grateful to her everyday for passing on her wisdom!

(Use a 200 ml capacity cup)

2 cups of gluten free flour
2 teaspoons cinnamon
1 teaspoon baking powder
1 cup of raisins
1 cup of walnuts
3 bananas
1 cup of dates
Half a cup of seeds
2 eggs
3 tablespoons melted butter or olive oil
1 cup coconut milk (add a bit more when mixing if you feel it’s too dry)

Instructions:
Mix the flour, cinnamon and baking powder together.
Mix all fruit,seeds and nuts together
Chop up bananas on the side
Mix the eggs together and then add butter/oil to them. Then add milk to the mixture.
Add the egg/milk/butter mixture to the flour one and mix together well. Then add the bananas and the nuts and fruit mix to it and again knead well. Place in the 180degree Celsius oven for 40 minutes and eat hot or cold! Enjoy!
