Easy roasted vegetables

Easy simple meat free lunch. You can add whatever vegetables you have in your fridge
Instructions
Pre heat to gas 6 put all your ingredients in a roasting pan roast for 60mins until all your vegetables are golden and cooked through
Ingredients
- 1 butternut squashed peeled and chopped
- 3 corgette chopped
- Handful of cherry tomatoes
- 1 red onions peeled and chopped
- 4 tbs olive oil
- 1 tsp pink himalayan salt
- 1 tsp ground black peper
- 4 whole rosemary springs ( remove before serving)
- 1 whole garlic ( use a sharp knife to cut 1/2 inch from the top and peel papery layers)
- Small bunch fresh thyme
