Easy roasted vegetables

Easy simple meat free lunch.  You can add whatever vegetables you have in your fridge

Instructions

  1. Pre heat to gas 6 put all your ingredients in a roasting pan roast for 60mins until all your vegetables are golden and cooked through

Ingredients

  • 1 butternut squashed peeled and chopped
  • 3 corgette chopped
  • Handful of cherry tomatoes
  • 1 red onions peeled and chopped
  • 4 tbs olive oil
  • 1 tsp pink himalayan salt
  • 1 tsp ground black peper
  • 4 whole rosemary springs ( remove before serving)
  • 1 whole garlic ( use a sharp knife to cut 1/2 inch from the top and peel papery layers)
  • Small bunch fresh thyme
