Fried Quinoa with pineapples

Quinoa is a great wheat-free alternative to starchy grains. Quinoa provides 5 times more grams of fiber and double the protein than rice- Making this fried quinoa a healthier alternative to fried rice. Pineapples give the fried quinoa a sweet and sticky taste almost like a sweet-and- sour thai dish. I decided to add pineapple because they are at their peak in March. Enjoy xx

Instructions

  1. Heat a large wok in medium heat, add 1 tsp of oil and fry your eggs until eggs are scrambled and cooked then transferred to a bowl

  2. Turn heat down add the remaining oil into the wok and stir fry the spring onions, ginger, garlic,edamame beans and pineapples for five minutes

  3. Add Quinoa, soy sauce and sesame seeds to wok are Stir and serve with a drizzle of sweet chill sauce or sriracha hot sauce

  • 4 tbsp sesame seed oil
  • 4 Spring onions finely sliced
  • 1/2 tsp Ginger
  • 2 garlic clothes
  • 4 cups cooked quinoa
  • 4 large eggs
  • 4 tbsp soya sauce (gluten free)
  • Cup of edamame beans
  • Half a cup finely chopped pineapples
  • Sesame seeds
