Gluten Free Sticky Toffee Date Cake
This Cake is free from refined sugar and perfect for a summer picnic or as dessert with cream and date syrup.
Optional – Add 3 mash ripe bananas along with 200g chopped dark chocolate to the batter for a richer cake
Preheat oven to Fan 180C/ Gas mark 6. Lightly oil your baking dish with butter.
Soak 4 dates in hot water (200ml) for 15 mins . After blend the dates and water until smooth.
Cream your gee and coconut sugar in a food processor until fluffy., then add eggs and blend until smooth. Add the flour baking powder, cinnamon, bicarbonate of soda and vanilla and blend on low speed until smooth. Add the date mixer to your cake batter blend until well combined .
Pour your batter into the prepared baking dish, dropping chopped dates. Bake for 50mins or until a toothpick comes out clear.
Let the cake cool before cutting up into squares and serving with Coconut yogurt and date syrup. Feel free to also make your own date sauce with maple syrup butter and double cream.
- 4 dates 100g Gee or Butter, plus extra for greasing 100g Coconut palm sugar 2 large eggs 200g Rude health sprothed spelt flour 1 tsp baking powder 1 tsp cinnamon 1 sp bicarbonate of soda 1/2 tsp vanilla extract 2 chopped dates Coconut yogurt and date syrup to serve
