Tasty cashew milk by Oreke xx

In the space of two weeks I have given this recipe to three sets of friends at three different dinners so I thought I’d share it with you all too. Cashew milk is one of my favourite energy drinks, those that know me know that I am obsessed with nuts – their health benefits are endless. We drink this as a family and the boys can’t get enough.

Tasty cashew milk

  • 1 cup of cashews
  • 3 cups of water
  • 2 dates
  • 1 teaspoon of vanilla extract
  • Pinch of cinnamon and sea salt

*I prefer to soak the cashews in a cup of water over night but if you want you could make the milk without soaking the cashews the less water the thicker the milk. I like my milk almost like a smoothie so I go very easy on the water.

Soak the cashews in two cups of water for 24 hours in the fridge. Place just the soaked nuts and all your ingredients in a blender and blend until you have a smooth creamy mixture

This milk is divine on its own or with your favourite muesli. Cashew cream can be achieved simply by making a thicker mixture (more nuts) and using a hand blender to finish off your milk mixture, the cream is one of the most amazing accompaniments  with your favourite cake.

With both my boys suffering from eczema and one very sensitive to milk this is one of our family’s favourite milk substitutes. I hope you enjoy it as much as we do – Till next time, Oreke xx

Magnesium is one of the main contents in cashew nuts, which is very important for bone health.

Cashews are cholesterol free and their high antioxidant content helps lower risk of cardiovascular and coronary heart diseases.

 

Gluten free does not necessarily mean healthy by Oreke xx

We strive to eat a gluten free diet at home mainly because my youngest son has a nasty reaction to gluten, in fact he is severely allergic to a lot of things.

Foods containing gluten are typically the foods associated with weight gain and other dietary diseases . If you bake a cake using gluten free flour  but use the same amount of  sugar and fat  as you would a regular cake then that cake is still unhealthy. A gluten free diet will only be healthy if you cut out on refined sugars and bad fats.

It is great that there is more choice available to those that are on a gluten free diet but it is important to remember that gluten free does not always mean healthy. Until next time xx
