Tasty cashew milk by Oreke xx

In the space of two weeks I have given this recipe to three sets of friends at three different dinners so I thought I’d share it with you all too. Cashew milk is one of my favourite energy drinks, those that know me know that I am obsessed with nuts – their health benefits are endless. We drink this as a family and the boys can’t get enough.

Tasty cashew milk

  • 1 cup of cashews
  • 3 cups of water
  • 2 dates
  • 1 teaspoon of vanilla extract
  • Pinch of cinnamon and sea salt

*I prefer to soak the cashews in a cup of water over night but if you want you could make the milk without soaking the cashews the less water the thicker the milk. I like my milk almost like a smoothie so I go very easy on the water.

Soak the cashews in two cups of water for 24 hours in the fridge. Place just the soaked nuts and all your ingredients in a blender and blend until you have a smooth creamy mixture

This milk is divine on its own or with your favourite muesli. Cashew cream can be achieved simply by making a thicker mixture (more nuts) and using a hand blender to finish off your milk mixture, the cream is one of the most amazing accompaniments  with your favourite cake.

With both my boys suffering from eczema and one very sensitive to milk this is one of our family’s favourite milk substitutes. I hope you enjoy it as much as we do – Till next time, Oreke xx

Healthy facts

Turkey burger with Coriander aka Green burger by Oreke

I love using fresh  ingredients to cook. Homemade turkey burgers always make a gratifying lunch and my boys love this. Once Ralph was diagnosed with his allergies I started paying more attention to food  labels and let’s just say it is absolutely shocking what rubbish you will find in most shop bought burgers. This burger does have chilies but I usually take the seeds off for my kids. We are a family that love our spices. Turkey is a good source of iron zinc and potassium. Till next time xx

Turkey mince – 500g

Spring onions – 5

Galic – 5 cloves

Red chillies – 2

Ginger – 5 tsp minced ginger

Coarse sea salt

Black pepper

Zest of 1 lime

Large handful of coriander

Coconut oil for frying – 1 Tbs

Put all the ingredient in a food processor apart from the turkey and coconut oil blitz. Place the mixture in a large bowl, add turkey and mix with hand. Set aside in fridge for an hour then make into 5 large patties or 10 small once. Heat coconut oil in a pan and pan fry burgers for a few minutes. Sevres 5

Ella’s Kitchen

Ella’s Kitchen is really a gift from above for any parent on the go. When I was pregnant with my first I had visions of hand making all his organic, ethically sourced meals in my Yves Saint Laurent dressing gown with my freshly blow dried hair and sipping a freshly squeezed juice.

Unfortunately, the reality is much different. I just did not have the time to do it all – even a bath was a rare luxury.

The question was how to balance it all, and Ella’s Kitchen played a part in helping.  Ella’s Kitchen have a vast range of organic, healthy food from when your child starts weaning so you don’t feel guilty when you just don’t have the time to prepare meals. However when you do have a moment – even if it is just a few minutes, Ella’s Kitchen have a new cook book called the Red One. In it you can find over a 100 simple and nutritious yummy recipes to inspire big and little cooks alike. From bubble + squeak to Big Beef Ragu as well as delicious desserts (my personal favourite). Both Carter and I have had lots of fun making and more importantly eating the meals and puds. It is a joy to have a cook book that is fun and easy to use
